What should a food manufacturer look for in an ERP system?
A food manufacturer needs ERP that can account for every batch of raw material it takes in, plan tightly enough to run on limited storage, and produce an audit trail that holds up under a food safety scheme. Condimentum mills mustard down to a fine flour and processes mint, and uses WinMan to keep track of all the different batches of product, how they are used, where they are used and when.
What is front-to-back and back-to-front traceability in food manufacturing?
Front-to-back traceability follows a raw material forward into every batch and shipment it ended up in, and back-to-front traceability starts from a finished product and works back to the components and suppliers behind it. Condimentum uses both in WinMan, so if a recall were raised by either a supplier or a customer it can identify quickly which manufacturing batches were affected and what components were used. 
Can a small team run an ERP system across finance, planning and procurement?
Yes. You do not need to be a large business to benefit from ERP, provided the system automates the routine work rather than adding administration on top of it. At Condimentum one person looks after IT, finance, planning and procurement, the accounts team is two people with one of them part-time, and WinMan runs month-end accounts, planning, goods inwards and shipments. 
Can an ERP system be implemented remotely?
Yes. A remote or hybrid implementation is workable, provided the supplier can run configuration, data migration and training online and keep on-site time for the parts that genuinely need people in the building.
